  1. Wash the cucumbers thoroughly and dry, then cut into small cubes.
  2. In a small bowl of rice vinegar, sugar, water, sesame oil, soy sauce, garlic and mirin stir to make a sauce. Season to taste with salt and stir in chopped fresh ginger.
